Lemon Cranberry Date Balls

Makes about 10 balls

1 cup almonds

1 cup dried cranberries

1 cup dates

Juice of 1 lemon

pinch of salt

3 tablespoons shredded unsweetened coconut

Add the almonds to a high speed blender or food processor. Pulse until the almonds are finely chopped (NOT almond butter). Add the remaining ingredients and blend until well incorporated. Spoon out the mixture and roll into balls. Store refrigerated in a covered container.
