Serves 2

1 13.5 ounce can of coconut milk

2 avocados

2 dates (or stevia)

 

Place your can of coconut milk into the refrigerator overnight.

The next day, place the avocados and dates into a blender or food processor. Blend until smooth as possible. Next, add the avocado mixture to a small bowl. Add the coconut milk and use a rubber spatula to fold the milk into the avocado mixture. Set in the freezer for about 4 hours before serving. 

It should be noted that many raw ice cream recipes (or mostly raw, like this one) are made to be eaten within the same day. If left in the freezer like conventional ice cream brands, the taste and texture become unappetizing.
