Buddha Bowls!
I love these...they are fast food for the conscious eater. I put all kinds of things in the them and use a lot of what I have as my leftovers from the night before.
Here is a good example of buddha bowls for 2 people:
1 -2 cups of brown rice or quinoa
1 cup chickpeas
1/2 purple onion
1 grated carrot and or cabbage
1/4 flaxseeds (ground)
1/4 hemp seeds
1 avocado
Sea salt and olive oil to taste. Add hummus if you like!
Cook or use leftover rice (use a 2 to 1 ratio of water to rice). If you're using raw vegy's finely chop them up and toss them in the rice. Season and add your goodies :) Enjoy!!
