Almond Carrot Apple Muffins

2 1⁄2 ground almonds

1 cup grated carrots

1⁄2 cup applesauce

3 eggs

1⁄4 cup melted oil (coconut, butter or olive oil) 1⁄4 cup honey, maple syrup or agave
1⁄2 cup baking soda
Pinch sea salt

Preheat to 350.

Combine all ingredients together and spoon into a greased muffin container. Bake for 20-25 minutes until golden. They don’t have to be completely dry in the centre because they will firm up when they cool. Enjoy!
